As part of our commitment to celebrating artisanal craftsmanship, we're delighted to have worked Irish knife-maker Hugo Byrne on a two collection collaboration.
Handmade in his Limerick workshop, the knives combine Katto's Japanese steel blades with breathtaking handles made from naturally felled woods and Atlantic drift plastic foraged from the beeches of Ireland.
Each collection consists of an 8.5" Chefs' knife and a 7.5" Santoku, priced at £250 and £240 respectively.
Collection No.1 features handles hand-carved from salvaged Irish oak and spalted beach. Whilst Collection No.2 uses wind-felled walnut and yew. Both collections use plastic salvaged from Irish beeches for their collars.
