Been eyeing Katto's knives for a while, brought this for a friend but not entirely sure they're going to get it. My other knives are a couple of Yu Kurosaki Gekkos, Ryusen Hamono SG2 Gyuto and Nakiri and a Fujiwara Denka Santoku that is my pride and joy. So I have no need for a new knife. That said this Katto kitchen knife is a beauty, in the nicest way possible the website pictures don't do it justice. The fit and finish is on a par with my other knives, it's got a really nice rocking action as well as push cutting beautifully. It's not as thin behind the blade or as laser sharp as my other knives (which cost 2-4 times more), on the other hand neither is it as delicate or needing to be taken care of as some of them. Haven't had it long enough to know how well it'll hold an edge, but it's solid feel in the hand makes me think it'll be fine. Wanted to in particular mention the Equipoise handle, it's a beautiful piece of design, looks great and feels even better in the hand, a game changer. It's not quite as beautiful as my Japanese knives, but it costs half to quarter as much, is a great design, beautifully finished, bulletproof solid and, at the price, a real bargain.
