
A quick, colourful stir-fry that’s perfect for practising your slicing and mixing. The homemade sauce is only three ingredients and tastes great on almost any veg.
Ingredients
For the stir-fry:
- 1 chicken breast or a handful of tofu
- 1 carrot
- 1 bell pepper
- 1 small onion
- A handful of sugar snap peas or green beans
- 1 tbsp oil
For the sauce:
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tsp lemon or lime juice
Method
- Slice the chicken or tofu into small bite-size strips.
- Slice the carrot, pepper and onion into thin pieces.
- Mix the soy sauce, honey and lemon/lime juice in a small bowl.
- Heat oil in a pan or wok.
- Add the chicken/tofu and cook until browned.
- Add all the vegetables and cook for 3–5 minutes until they soften.
- Pour in the sauce and stir until everything is coated and glossy.
