Oh, but they're beautiful, beautiful things. I *know* they're expensive, but you're worth it. Your cooking is worth it. Your kitchen is worth it.
When you first use one after your previous, slightly blunt, inferior knife you *will* cut yourself. You probably won't even notice until you start bleeding into your vegetables. You won't curse, you won't cry out, you will marvel at just how easily it went through your finger. You will realise you'll have to up your knife game and respect these marvellous things.
If I were in Katto's marketing department I'd include a pack of plasters with each one, with the Katto logo on - so you can wear it with pride.
