I am a big fan of Japanese knives, I have owned several very nice folded Japanese steel knives and love their ability to take and hold an edge.
I was looking for a knife very last minute that was both good quality steel and had a unique aesthetic. Because I was hosting a series ice carving masterclasses over a few consecutive long days, the knife would need to be strong enough to not chip and sharp enough to smoothly cut through hard ice.
The Katto held up extremely well, as you can imagine spending hours shaving large blocks of Ice down into small cubes, spheres and diamonds really takes a toll on the blade. The Katto held up extremely well, in fact I was shocked at how well it performed.
I needed it at short notice because my Japanese knife had gone missing and I needed a last minute replacement, waiting on a knife from Japan would have taken too long, so I decided to give Katto a try. They seemed to have quick delivery times and that was very important to me, I called ahead and spoke to Josh who told me it woiuld arrive in time, the next day he realised there might be a delay in shipping and offered to personally drop the knife to me to ensure I had it for my presentations. This kind of service is rare these days, and it's meant more to me than they could have imagined. This coupled with the fact every single person who seen the knife liked it, with a lot of positive comments and people asking where I got it. Hopefully that translated into some well deserved sales for the Katto team.
It’s safe to say I will be ordering the rest of the collection, and possibly even the magnetic holder for them. I am thoroughly impressed, i’ll be a fan for at least the life of the knife which i'm betting will be a long time.
